How to Apply a Dry Beef Marinade

  1. Prepare the beef. Cut it into steaks, thin strips or kebab-sized pieces. Pat the surface with kitchen paper if it carries excess moisture.
  2. Choose dry or damp application. Apply the marinade directly to dry beef. For extra grip, add 1 to 2 teaspoons of cold water and turn the meat until the surface feels damp. Do not rinse raw beef under the tap.
  3. Add the marinade. Follow the packet directions for the amount of seasoning that matches your quantity of beef.
  4. Coat the meat. Turn each piece until the marinade covers every surface. Keep raw beef and utensils away from cooked food.
  5. Marinate for 45 to 60 minutes. Cover the bowl and keep it in the fridge.
  6. Cook without delay. Remove the beef from the fridge as you heat your pan, oven, air fryer or grill. Discard any seasoning left in the bowl after contact with raw meat.

Best Beef Cuts for Quick Marinating

Rump steak

Rump offers a full beef flavour and suits pan-frying or grilling. Use steaks around 2cm thick, or slice the meat across the grain for fast-cooking strips.

Sirloin steak

Sirloin cooks well in a hot pan or under the grill. Its tender texture suits a 45 to 60-minute marinade.

Bavette or flank steak

These cuts work well with tandoori seasoning. Marinate the steak whole, cook it over high heat and slice across the grain before serving.

Diced beef

Cut tender steak into pieces of a similar size for skewers. Matching pieces cook at the same pace and reduce the risk of dry edges.

Beef strips

Thin strips suit weeknight meals. They need less cooking time than a whole steak, so keep the pan hot and cook them in small batches.

Thickness affects both marinating and cooking time. Thin strips take on surface seasoning across a larger area. Thick steaks need more time in the pan or oven and benefit from a thermometer check.

How to Cook Tandoori-Marinated Beef

Pan-fried beef strips

  • Heat a non-stick or well-seasoned frying pan over medium-high heat.
  • Add the strips in a single layer.
  • Cook them in small batches for 2 to 4 minutes, turning as they brown.
  • Cut into a thick piece or check the temperature before serving.
  • Transfer the beef to a clean plate.

Do not crowd the pan. Too much beef releases moisture and reduces browning.

Pan-fried steak

  • Heat the pan over medium-high heat.
  • Add the marinated steak.
  • Cook a 2cm steak for around 3 to 5 minutes per side, depending on the cut and your preferred doneness.
  • Check the centre with a food thermometer.
  • Rest the steak for 5 minutes before slicing.

The tandoori coating can darken over fierce heat. Reduce the temperature if the spices start to catch before the centre reaches your chosen doneness.

Oven-cooked tandoori beef

  • Heat the oven to 200°C, 180°C fan or Gas 6.
  • Arrange beef pieces on a lined tray with space between them.
  • Cook strips or kebab pieces for around 12 to 18 minutes.
  • Turn the pieces halfway through the cooking time.
  • Check a thick piece before serving.

Ovens and cuts vary. Start checking before the end of the suggested range.

Grilled tandoori steak or kebabs

  • Heat the grill to medium-high.
  • Place steaks or skewers on a grill tray.
  • Cook 2cm steaks for around 3 to 5 minutes per side.
  • Turn kebabs during cooking so each surface meets the heat.
  • Check the centre before serving.

For wooden skewers, soak them in water before threading the beef.

Air fryer tandoori beef

  • Preheat the air fryer if your model requires it.
  • Set the temperature to 160°C maximum.
  • Arrange beef strips or kebab pieces in one layer.
  • Cook for around 10 to 14 minutes, turning halfway through.
  • Check the thickest piece and add short cooking intervals if needed.

Keep raw beef chilled during marinating. Wash your hands after touching it, and use a clean plate and utensils for the cooked meat.

UK food-safety guidance allows intact whole steaks to retain pink in the centre when you sear every outer surface. Kebabs, strips and pierced cuts need more care because preparation can transfer surface bacteria.

For a clear safety benchmark, cook beef until the centre reaches one of these time and temperature combinations:
