How to Cook Tandoori Fish in the Air Fryer, Pan or Oven

Ingredients

  • 600g skinless fish fillets, cut into large pieces if making fish tikka
  • Ever East Tandoori Masala for Fish Marinade, using the amount stated on the pack
  • A small amount of water, optional
  • A little cooking oil for the pan, if your pan requires it
  • Chopped coriander and lemon wedges for serving, optional

You do not need oil to prepare the marinade. A small amount in the frying pan can stop lean fish from sticking.

Basic preparation

  1. Check the fish for bones, then pat the surface dry with kitchen paper.
  2. Leave whole fillets intact or cut them into pieces of a similar size.
  3. Apply the Ever East marinade to the dry fish. You can wet the surface with a little water first if you want the coating to cling more firmly.
  4. Cover the fish and place it in the fridge for 45 to 60 minutes.
  5. Choose your air fryer, pan or oven method below.
  6. Check the thickest piece before serving.

Suitable fish and seafood

Choose firm fillets that can hold their shape as you coat and cook them.

Cod and haddock

Cod and haddock have a mild flavour that works well with tandoori masala. Their lean flesh can dry out, so check them at the lower end of the cooking range.

Salmon

Salmon stays moist during air frying and oven cooking. Use skinless fillets for an even coating or leave the skin on if you want a firmer base in the pan.

Sea bass

Sea bass fillets cook fast. Pan frying suits thin fillets, while the air fryer gives the edges a firmer finish.

Tilapia, basa and other white fish fillets

Tilapia and basa offer an accessible choice for family meals. These fillets can vary in thickness, so check the centre rather than relying on the clock.

King prawns

Use raw, peeled king prawns and remove the vein before coating. Prawns need less cooking time than fish fillets.

Thick fillets take longer than thin pieces. If you cook several pieces together, choose pieces of a similar size so they finish at the same time.

Air-fryer tandoori fish

The air fryer suits fast weeknight meals and keeps washing-up under control. A single layer helps hot air reach each piece.

Air-fryer method

  1. Prepare and marinate the fish for 45 to 60 minutes.
  2. Preheat your air fryer if its manufacturer recommends this step.
  3. Set the temperature to 160°C. Do not exceed 160°C.
  4. Arrange the fish in one layer with space between each piece.
  5. Cook thin fillets or fish tikka pieces for 8 to 10 minutes.
  6. Allow 10 to 14 minutes for thick fillets, checking the centre before serving.
  7. Turn firm pieces after half the cooking time. Handle flaky white fish with a wide spatula or leave it undisturbed if turning may break it.
  8. Cook raw king prawns for 6 to 8 minutes, shaking the basket after 3 to 4 minutes.

Air-fryer models vary in basket size and heat flow. Start checking before the end of the stated range. The fish should look opaque through the centre and separate into moist flakes under a fork.

Do not stack the pieces. Cook a second batch if the basket feels crowded.

Pan-fried tandoori fish

A heavy non-stick frying pan or seasoned cast-iron pan gives fish a browned surface without an oven.

Pan-frying method

  1. Heat the pan over a medium heat.
  2. Add a small amount of cooking oil if your pan or fish requires it. The marinade itself needs no oil.
  3. Place the fish in the pan with space around each piece.
  4. Cook thin fillets for 2 to 3 minutes per side.
  5. Cook thick fillets for around 4 to 5 minutes per side, then check the centre.
  6. Slide a wide fish slice under the whole fillet before turning it once.
  7. Rest the cooked fish for 1 to 2 minutes before serving.

Avoid high heat. Tandoori spices can catch on the pan before a thick fillet cooks through. Reduce the heat if the coating darkens too fast.

Pan-frying king prawns

Cook raw king prawns over a medium heat for 2 to 3 minutes per side. Remove them once the flesh turns opaque through the centre and feels firm. The coloured marinade can hide some visual changes, so cut into one large prawn if you need to check it.

Oven-cooked tandoori fish

The oven works well when you need to cook four portions together. It also reduces handling, which helps delicate fish keep its shape.

Oven method

  1. Heat a fan oven to 180°C, or a conventional oven to 200°C.
  2. Line a baking tray with baking paper.
  3. Arrange the marinated fish in one layer and leave space between the portions.
  4. Cook thin fillets or fish tikka pieces for 10 to 12 minutes.
  5. Allow 12 to 16 minutes for thicker white fish or salmon fillets.
  6. Cook king prawns for around 8 to 10 minutes, turning them once.
  7. Check the thickest part before removing the tray.

You do not need to turn delicate fillets. Turn thick, firm pieces after half the cooking time if you want colour on both sides.

Lean white fish can dry out within a few extra minutes. Check cod, haddock, tilapia and basa at the lower end of the range.

How to tell when tandoori fish has cooked through

Check the centre of the thickest piece. Cooked fish should

  • Turn opaque through the centre
  • Separate into moist flakes under light pressure from a fork
  • Feel hot through the middle
  • Show no cold or translucent section in the thickest part

The marinade gives the surface a strong colour, so do not judge doneness from the coating.

A clean food thermometer gives you a more dependable check for thick portions. Insert it into the centre of the thickest piece without touching the tray or pan. The UK Food Standards Agency lists a core temperature of 70°C for two minutes as one safe cooking combination. Follow current Food Standards Agency guidance and your thermometer manufacturer’s instructions.

Cook raw king prawns until the flesh turns opaque throughout and the centre feels hot. Check one of the largest prawns, since smaller prawns may finish first.

Tips for moist tandoori fish

Cut pieces to a similar size

Even portions cook at a similar pace. Small fish tikka pieces can dry out while a thick piece finishes.

Keep the coating on the surface

Pat wet fish dry before applying the marinade. If you want more grip, use a light wetting of water rather than soaking the fish.

Marinate in the fridge

Give the fish 45 to 60 minutes in the fridge. You do not need to leave it overnight.

Leave room around each portion

Space helps heat reach the sides of the fish. Crowding can make the coating damp and extend the cooking time.

Check lean fish first

Cod, haddock and other lean white fish lose moisture faster than salmon. Check them at the start of the stated timing range.
