How to Coat Chicken

1. Prepare your workspace

Keep raw chicken away from cooked food, salad and serving dishes. Use a separate chopping board and utensils.

The Food Standards Agency advises against washing raw chicken because splashing water can spread bacteria around your sink and worktop. If you choose the optional water step for coating adhesion, add a small controlled amount of water in the preparation bowl rather than rinsing the chicken under a running tap.

2. Prepare the chicken

Trim the chicken and cut larger portions into similar sizes. Pat the surface dry with kitchen paper if you plan to apply the marinade to dry meat.

3. Choose your application method

Use either of these methods

  • Dry application: Add the Southern Fried Chicken Marinade straight to dry chicken.
  • Optional water method: Moisten the surface with a small amount of water, then add the marinade.

Do not soak the chicken. Excess water can create patches and weaken the coating.

4. Cover each piece

Turn the chicken until the marinade covers all sides. Press the mixture onto exposed areas rather than leaving loose seasoning at the bottom of the bowl.

5. Marinate for 45 to 60 minutes

Cover the chicken and keep it in the fridge during the marination time. Do not leave raw chicken at room temperature.

6. Cook using your preferred method

Transfer the chicken to your oven tray, air fryer or pan. Discard any marinade that has touched raw chicken.

Wash your hands with soap and hot water for at least 20 seconds. Clean your chopping board, utensils and worktop before preparing side dishes.

Air fryer

  • Preheat your air fryer if the manufacturer recommends it.
  • Arrange the chicken in one layer with space around each piece.
  • Set the air fryer to no more than 160°C.
  • Turn the pieces during cooking if your appliance requires it.
  • Check the thickest part with a food thermometer before serving.

Cook in batches if the basket feels crowded. Air needs space to move around the chicken and crisp the coating.

Oven

  • Place the coated chicken on a suitable oven tray or rack.
  • Leave space between each piece.
  • Follow the temperature and cooking guidance on the current pack.
  • Turn the pieces if the pack directions call for it.
  • Check the thickest piece before taking the full tray from the oven.

A rack can help heat reach more of the chicken surface. Use a lined tray beneath it to catch drips.

Pan

  • Choose pieces that can cook through without burning the coating, such as breast strips or boneless thigh pieces.
  • Heat a suitable pan and follow the pack directions for cooking fat and temperature.
  • Leave room between the pieces.
  • Turn the chicken as needed to colour each side.
  • Reduce the heat if the outside colours before the centre reaches a safe temperature.

Check That Your Chicken Has Cooked Through

Insert a clean food thermometer into the thickest part without touching the bone. The centre should reach 75°C for at least 30 seconds.

Without a thermometer, cut into the thickest piece. The meat should feel steaming hot throughout, show no pink flesh and release clear juices. Check more than one piece if the portions differ in size.

Keep the pieces similar in size

Small strips cook before thick thighs. Group matching cuts together or cook them in separate batches.

Control the moisture
